Chicken Roll-Ups

4 chicken breasts, cooked and cubed
2 pkg. cream cheese
salt and pepper to taste
2 pkg. Pillsbury croissant rolls
1 box chicken stove top stuffing, slightly crushed
2 cans chicken gravy

Cook chicken and cube. Mix chicken and cream cheese together, add salt and pepper to taste.
Put one small scoop of mixture in the middle of one croissant, roll up. Dip each roll up in melted butter, then in stuffing mix. Bake 350 for 20-25 minutes, or until golden brown. Serve with chicken gravy.

Teriyaki Chicken Stir Fry

5-6 boneless chicken breasts
1 cup soy sauce
1/2 cup brown sugar
2 cloves garlic, crushed
1 tsp. grated ginger
2 tsp olive oil
1 cup water

Mix all ingredients and stir well. Marinate chicken with half the mixture overnight. Refrigerate other half of mixture to use for stir fry. Bake chicken about 40 minutes at 350 degrees. While chicken is cooking make rice. After chicken has cooled, I cut into small pieces. Preheat wok or large skillet with 1 tbs oil, stir fry veggies and chicken together in the remainder of the teriyaki sauce. Serve over rice.

Sweet Potato Souffle'

1 large can yams(29 oz.) or 3 large sweet potatoes cooked, peeled and mashed
1 small can(5 oz.) evaporated milk
2 eggs, beaten
1 cup sugar
1 stick butter, melted
1 1/2 tsp. vanilla

Topping:
1 cup brown sugar
1/3 cup flour
3/4 cup chopped pecans
1/2 stick butter, melted

Mix first 6 ingredients in mixer and spoon into buttered 8" square casserole dish. Mix next 4 ingredients into crumbly mixture and sprinkle on top of potatoes. Sprinkle with cinnamon. Bake 350 for 30 minutes. (I usually double the recipe for dinner group and holidays, and use a 9x13 dish instead) Hope your kids will eat it! Mine really like them!! (:

Barbecue Chicken Pizza

This isn't really even a recipe, I just kind of created it from a Pampered Chef recipe, but I have so many people ask me how to make it and my family LOVES it, so here goes:

1 loaf Rhoades bread dough, unthawed
3 cups cooked diced chicken
1 cup barbecue sauce, I use KC Masterpeice, I like it best for the pizza
2 cups mozzarella cheese
Toppings: any toppings work I've used green peppers, red onions, olives, mushrooms, pineapple whatever your family likes will work, I keep the onions and peppers large enough to be easily taken off by those who don't like them.
I thaw the bread dough in the microwave, then roll it out in the shape of the stone (rectangle or round). Bake the dough-only for about 10 minutes on 350 ( I do this to cook the crust a little before the toppings go on or they seem to make it soggy). Combine chicken and barbecue sauce together and put on dough. Add cheese and toppings. Bake on 350 for about 20 minutes or until edges are golden brown. Hope it is filling enough for your families, this is my families favorite meal . (Sue I'm thinking your family might need 2 pizzas, but not sure, do you have 2 stones. Let me know for next time. )

Peanut Butter Bars

3/4 cup butter
3/4 cup sugar
3/4 cup peanut butter
3/4 tsp. soda
1 1/2cup flour
3/4 cup brown sugar
2 eggs
1/2 tsp. salt
1/2 tsp. vanilla
1 1/2 cup rolled oats

Mix all together. Spread on a large cookie sheet. Bake at 350 for 12-14 minutes. Spread 1 cup whipped peanut butter on hot cookies. Cool, then spread with chocolate frosting.

Taco Soup

This one is so simple, but just in case you don't have the recipe. Here it is:

1 lb. ground beef (ground turkey for Becky, of course)
1 8 oz. can tomato sauce
1 15 oz. can kidney beans drained(I like to use black beans instead)
1 15 oz. can stewed tomatoes
1 can corn (drained)
1 pkg. taco seasoning
water to desired consistency (about two cups or cans)

Brown ground beef. Drain. Stir in tomato sauce, kidney beans, tomatoes, corn, and taco season. Add water, and bring to boil, reduce heat and simmer. Serve with grated cheese, tortilla chips, sour cream etc.

Fettucine Alfredo

1 cube butter
1 8 oz cream cheese
1 pint heavy whipping cream
1 c parmesan cheese
2 tsp garlic salt (to taste)

Melt butter and cream cheese together in pan on range. Beat in whipping cream. Add garlic salt. Heat until hot. Add parmesan cheese. Pour over cooked fettucine noodles. (I use penne pasta for dinner group.

Optional: add chicken, or shrimp or broccoli.
