Chicken Roll-Ups

4 chicken breasts, cooked and cubed
2 pkg. cream cheese
salt and pepper to taste
2 pkg. Pillsbury croissant rolls
1 box chicken stove top stuffing, slightly crushed
2 cans chicken gravy

Cook chicken and cube. Mix chicken and cream cheese together, add salt and pepper to taste.
Put one small scoop of mixture in the middle of one croissant, roll up. Dip each roll up in melted butter, then in stuffing mix. Bake 350 for 20-25 minutes, or until golden brown. Serve with chicken gravy.

Teriyaki Chicken Stir Fry

5-6 boneless chicken breasts
1 cup soy sauce
1/2 cup brown sugar
2 cloves garlic, crushed
1 tsp. grated ginger
2 tsp olive oil
1 cup water

Mix all ingredients and stir well. Marinate chicken with half the mixture overnight. Refrigerate other half of mixture to use for stir fry. Bake chicken about 40 minutes at 350 degrees. While chicken is cooking make rice. After chicken has cooled, I cut into small pieces. Preheat wok or large skillet with 1 tbs oil, stir fry veggies and chicken together in the remainder of the teriyaki sauce. Serve over rice.

Sweet Potato Souffle'

1 large can yams(29 oz.) or 3 large sweet potatoes cooked, peeled and mashed
1 small can(5 oz.) evaporated milk
2 eggs, beaten
1 cup sugar
1 stick butter, melted
1 1/2 tsp. vanilla

Topping:
1 cup brown sugar
1/3 cup flour
3/4 cup chopped pecans
1/2 stick butter, melted

Mix first 6 ingredients in mixer and spoon into buttered 8" square casserole dish. Mix next 4 ingredients into crumbly mixture and sprinkle on top of potatoes. Sprinkle with cinnamon. Bake 350 for 30 minutes. (I usually double the recipe for dinner group and holidays, and use a 9x13 dish instead) Hope your kids will eat it! Mine really like them!! (:
