Sweet Potato Souffle'

1 large can yams(29 oz.) or 3 large sweet potatoes cooked, peeled and mashed
1 small can(5 oz.) evaporated milk
2 eggs, beaten
1 cup sugar
1 stick butter, melted
1 1/2 tsp. vanilla

Topping:
1 cup brown sugar
1/3 cup flour
3/4 cup chopped pecans
1/2 stick butter, melted

Mix first 6 ingredients in mixer and spoon into buttered 8" square casserole dish. Mix next 4 ingredients into crumbly mixture and sprinkle on top of potatoes. Sprinkle with cinnamon. Bake 350 for 30 minutes. (I usually double the recipe for dinner group and holidays, and use a 9x13 dish instead) Hope your kids will eat it! Mine really like them!! (:

I hate sweet potatoes...but I LOVED this. I will definitely be using that recipe. My kids know that I don't like sweet potatoes and they said that I liked them because they had lots of sugar on them. That's me. Sugar Nut.
Thanks!! Maybe if sweet potatoes were cooked this way at Thanksgiving, I would eat them.

oh so good. We ate them with the dinner this time - instead of waiting for dessert. The kids loved the BBQ chicken, rolls & sweet potatoes! Thanks

This is one of my faves! I need to make it myself sometime! My kids all love it, even Owen, who is WAY picky, ate seconds of it!

Oh, Jodi - I am with Stephanie, I do not eat sweet potatoes but I had two servings of this one. I don't care what you say - it's still dessert!

And, I might add that it was the perfect amount for our family. And as far as being complete - You provided 2 sides - just for the record, that makes some of us look bad!
